imageOriginally born in Dayton, Ohio and moved to California at age 12 to spend the summer with my father and stepmother. I shortly discovered my passion for food with my step-grandfather (who was a n executive chef-retired). Started cooking for the summer and be September I was preparing three meals a day. Moved to San Francisco and got my first culinary job at 14. I've been cooking most every day since. I've been teaching cooking and wine appreciation classes thru the continuing education, or Outreach department at UNLV for over twenty three years and consulting to restaurants and hotels all over the west from west Texas to Oregon since 1983. I also taught cooking classes at the Clark County Community College for several years, and school politics forced me to quit there. I've written several cookbooks and the latest is titled "Never Trust A skinny Chef". I started broadcasting over two years ago with a radio program called "Les Kincaid's Lifestyles Las Vegas". The show emanates from Charlie Palmer's Aureole Las Vegas restaurant live in Mandalay Bay Hotel/Casino. This show runs from noon to 1:30 PM (pacific each Saturday.) After one year we went national and syndicated the show into over 26 million households. In September of 2000 I started a unique wine show ("Les' Wines & Vines). Americas first wine show that has a live audience and tastes wines during the show while interviewing the winery owner, winemaker, wine writer, sommelier or master sommelier. This is also nationally syndicated into over 26 million households every Thursday evening from 7-8 PM.

On February 4th 2001 we started yet another radio show, Tableside duJour. We move to a different restaurant each week in Las Vegas. Interviewing the executive chef or chef du cuisine, owner/manager, sommelier and discuss the menu, signature dishes, wine list, wine programs and the ambiance for the establishment. This is a great opportunity for restaurants to show their wares in such as way that listeners will feel comfortable to enjoy a meal at a place they thought was expensive, or snobbish, because they have had a chance to hear the comments and ideas heard during the show. I have a few more projects in the mill at this time and will be happy to share them with you as they develop. I've included in this site many user-friendly recipes and some common sense advice throughout these many pages. If you are going to visit Las Vegas and would like to know of some of my personal favorite restaurants (see above) or hotel choices to visit, to play any golf course in the Las Vegas area (see golf above), just e-mail me and I'll respond as quickly as I can. I love anything to do with food, wine or golf and I welcome and encourage everyone's participation in this site.
